
Imagine a world without cookies, it’s not fun! If you have allergies or you’re gluten intolerant or sensitive most cookies are off limits. My daughter is just that poor soul. She is a tiny little thing and loves cookies and treats. When she was a little girl the doctors thought she had Celiac’s Disease. She was taken off all wheat products for many years. When she reached school age she was able to tolerate wheat better, but as an adult her doctors have said she is indeed gluten intolerant. Even one small cookie sends her stomach into a violent reaction. I won’t go into graphic detail. Suffice to say, she suffers miserably. Thanks to Lucy’s Cookies she is enjoying sweet, crunchy cookies, and let me tell ya, the whole family loves these yummy treats!

When Dr. Lucy Gibney discovered her child had severe food allergies, she got down to some serious medical research, in the kitchen. What began as a mother’s tasty recipe for her child has today developed into a delicious alternative for people with or without special dietary considerations. You would never ever know these cookies are gluten or allergen free! Lucy’s cookies are gluten free and made without milk, eggs, peanuts or tree nuts. They taste absolutely fabulous! The three flavors I received are still so new they aren’t even on the website yet; Maple Bliss, Chocolate Cookie and Ginger Snap. Each individual box is huge, 5.5 oz and boy are they tasty. We are a family of chocoholics so of course we all gravitate towards those and they are fabu. But oh those Ginger Snaps with a cup of tea are my favorite. There is nothing fake or phoney about these cookies. They are light, crispy and full of spicy goodness!
I know that in the cooler months I am going to pounce on the Maple Bliss Cookie. A few of those with a cold glass of almond or soy milk is a perfect snack. They’re cholesterol and trans fat free!
