The hustle and bustle of the holidays are behind us and it’s time to settle down and relax!  I know Hubby is happy to say good-bye to turkey, at least for a while.  I’m happy to get back to preparing simpler meals.  Hubby loves fish and when I’m looking for a quick seafood dinner I turn to SeaPak.  They take the guess work out of preparing seafood.  They have a large selection of shrimp and seafood and Hubby always enjoys their products.

I was Blessed to receive a bag of SeaPak Popcorn Fish for review.

Popcorn Fish is great as an appetizer, meal or after school snack.Hubby has had SeaPak’s Popcorn Fish before and loved it.  Last time I just popped it in the oven and served it with cocktail sauce. These mild bites of flaky white fish are cut from whole Pollock fillets and finished off with SeaPak’s signature breadcrumb coating so they bake up golden and crispy in no time flat! Popcorn Fish is convenient, easy to prepare and I love the resealable bag!  There are approximately 50 pieces, so you get a nice large bag!

Former Executive Food Editor of Southern Living, Scott Jones has created a delicious Jambalaya recipe using SeaPak PopCorn Fish.  It’s perfect for a cold wintery night and you can have it on the table in 35 minutes.  Serve with a lovely salad or green veggie and you’ve got a balanced dinner the family will love!

PopCorn Fish Jambalaya
Prep Time: 10 minutes Cook Time: 35 minutes
Serves 4-6

a delicious Jambalaya recipe using SeaPak Popcorn Shrimp

Ingredients

  • 1 (14-oz.) package andouille sausage, cut into ¼  inch thick slices
  • 1 (10-oz.) package frozen vegetable seasoning blend
  • 1 (32-oz.) container low -sodium, fat-free chicken broth
  • 1 (14.5-oz.) can fire-roasted diced tomatoes with garlic
  • 2 cups uncooked long-grain rice
  • 1 teaspoon Cajun seasoning
  • 1 (20-oz.) package SeaPak Popcorn Shrimp
  • 2 tablespoons thinly sliced green onions

Directions

  • Cook sausage in a large Dutch oven over medium-high heat, stirring frequently, 8 to 10 minutes or until browned. Remove sausage with a slotted spoon; drain on paper towels.
  • Add vegetable seasoning blend to hot drippings in Dutch oven, and sauté 3 to 5 minutes or until thoroughly heated. Add broth, next 3 ingredients and sausage. Bring to a boil; cover, reduce heat to low, and cook 18 to 20 minutes or until rice is tender and liquid is absorbed.
  • Meanwhile, preheat oven to 450°. Bake Popcorn Shrimp according to package directions.
  • Spoon jambalaya into individual bowls or a large serving bowl; top with Popcorn Shrimp. Top with green onions, and serve immediately.
