I became a vegetarian over 20+ years ago.  I moved to the south in 1998 from New York and was delighted to find foods I had never heard of before.  I admit, I still can’t stomach okra in any form but give me a pot of greens and I can turn ‘em into something special!  But there are other dishes I haven’t quite mastered yet, like grits!  Oh If you’ve never had grits the southern, ‘soul-ful’ way ya gotta come down south baby!

The Inspired Vegan is a great cookbook full of creative recipes that take advantage of fresh seasonal ingredients. You’ll find a mouthwatering selection of menus that are guided by the bounty of each season. The Inspired Vegan is loaded with recipes, stories, music and art.

I picked up The Inspired Vegan to find a few recipes recently.  I was feeling inspired and thought I might make a new dish or two.  Instead I became enthralled with the stories that accompany each recipe and menu and instead of cooking I found myself reading!  Hey, why not!  :)   I did find a recipe I’ll be making this weekend; “Velvety Grits with Sautee’d Summer Squash Heirloom Tomatoes and Parsley- Walnut Pesto”!  If I have to substitute another type of squash so be it, but I am making this recipe.  Yum!

The Inspired Vegan contains lots of helpful tips and techniques and a chapter devoted to the basics. Favorite Recipes Include:
