If you have a gluten sensitivity then you know a muffin, bread, cookie or slice of cake is something that is off limits.  One bite for someone who is gluten-intolerant is enough to make them incredibly ill.  My daughter loves chocolate cake and I’ve been searching for a decadent, gluten-free recipe for ages.  Nothing really measured up, until I found Tropical Traditions Organic Coconut Flour!

Wheat flour is the main ingredient in baked goods and as we all know wheat is what those who suffer from gluten allergies avoid.  So how do you bake without wheat flour?  You substitute!  Tropical Traditions makes an organic coconut flour that is gluten-free, high in fiber and protein.  It’s also fabulous in recipes.  Think, rich, decadent brownies, chocolate cakes, cookies and quick breads!  The possibilities are endless!

Tropical Traditions Organic Coconut Flour is fiber from the coconut meat after most of the oil has been extracted to make Virgin Coconut Oil. It is certified organic, unsweetened, and has not been treated with sulfites. Tropical Traditions organic coconut flour is high in dietary fiber and protein, and is gluten-free.

Tropical Traditions organic coconut flour can be used in recipes as is to create totally gluten-free recipes or mix it with grain-based flours to boost the fiber and protein content.  Organic Coconut Flour is more flavorful than plain old white flour.  It’s got a lightly sweet, coconut flavor that is really tasty.  It is especially delicious in chocolate recipes, nut recipes and anything tropical.

For those looking to boost their protein intake, try adding a teaspoon or so of Organic Coconut Flour to your smoothies and shakes.  The flour contains 19% non-gluten protein so it will really add a boost to your drinks.  It’s also great for thickening soups and sauces.

Here is the recipe I will be making for my daughter’s birthday! It’s totally gluten-free and looks fabulous!
Coconut Flour Chocolate Cake

Ingredients

  • 1 cup butter – softened
  • 1 2/3 cups sugar
  • 10 eggs (at room temperature)
  • ½ teaspoon vanilla extract
  • 2 cups coconut flour
  • 1 cup unsweetened cocoa powder
  • 1 ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/3 cup milk or half n half
  • Coconut oil

Directions

  1. Pre-heat oven to 350 degrees. Grease two 9 inch or 8 inch layer pans with coconut oil and dust with cocoa powder.
  2. In an electric mixer fitted with the paddle attachment, combine butter and sugar, and beat together for about 2 minutes. Add eggs in one at a time and beat high speed for about 3 minutes. Add in the vanilla while beating the eggs and butter mixture. In a separate bowl, combine the dry ingredients together and add alternately with the milk to the butter mixture. Beat batter for about five minutes on high speed. Spoon batter into the two prepared cake pans and smoothen out tops. Bake at 350 for 30-35 minutes, or until toothpick inserted into the center of cake comes out clean. Place pans on wire rack and cool for 10 minutes before removing from pans. Cool cakes completely before frosting. Use your favorite frosting to frost the cake.
  3. Peppermint Chocolate cake variation: add 1 teaspoon peppermint extract to batter before pouring into pans and mix well. Frost cake with peppermint frosting or frosting of your choice.
  4. Cupcakes: Make recipe as directed but spoon batter into muffin cups and bake for about 26-30 minutes. Frost after cupcakes have cooled completely. Makes about 24 cupcakes.

    I would love to try the coconut flour it is something that would be well suited for anyone especially people that can’t use regular flour or wheat or the like to cook with something new to me is the coconut flour but, I will certainly check it out I have a friend that I know would love this she loves organic foods and cooks with them.
