Back in the day eating vegan meant eating bland, tasteless foods.  There weren’t many vegan dairy and meat substitutes on the market so if you wanted something creamy or meat-like in consistency you had to be a creative little sucker.  Fruits and veggies are always delicious and add in beans, grains, nuts and seeds and a vegan diet is terrific.  Nowadays there is such a plethora of vegan products available that enjoying a vegan diet is not only easy it’s downright yummy!

While packaged vegan and vegetarian products are tasty, creating recipes from scratch is so much better!  Why?  Because you know what you’re getting.  I’m the first one to pour soy milk over my cereal in the morning and I kinda love my veggie burgers.  But there’s nothing like a bowl of homemade veggie stew simmering on the stove because I control the sodium, fat and what goes into the pot!

Let Them Eat Vegan! relies on whole, fresh ingredients.

You won’t find processed vegan substitutes or white flour.  These recipes are filled with ingredients like fresh vegetables, whole-grain flours, natural sweeteners, raw foods, and grains and beans.  It’s true that when you eat whole, unprocessed foods you feel great and look like a million bucks.  Let Them Eat Vegan! contains eleven chapters of delicious vegan recipes from breakfast to dessert.  Chapters include Breakfast Bites and Smoothies, Salads That Makes a Meal, Vegan Soup for the Soul, Your Main Squeeze: Casseroles, One-Pot Wonders and Tarts, God Pasta Belongs on a Plate-Not the Wall! C Is for Cookie That’s Good Enough for Me and more.  What I love most about this cookbook is that Dreena has added a series of categorized notes to the recipes to assist the reader in recreating and enhancing them.

Some recipes include an If this Apron Could Talk note (This is all the extra information Dreena wants to share from her own experience with the recipe.  It might be technique or quick fixes. Other recipes include Savvy Subs and Adds.  This is where you’ll find those substitutions or additions that work well in the recipe.  Other notes include Kid-Friendly, Ingredients 411 and more!

Let Them Eat Vegan! includes a huge variety of allergy free recipes but where substitutions can be made for high allergen foods you’ll find a note at the bottom of the recipe that says Allergy-Free or Bust!  You’ll find this incredibly helpful if you cook for someone with allergies.
