Cabot Creamery recently unveiled a brand new look for their light cheese. If you haven’t gotten around to sampling their award winning cheese now’s the perfect time! Cabot Creamery has won awards for their Light Cheeses at every major cheese competition, from the World Championship Cheese Competitions to the American Cheese Society. Being in continuous operation since 1919, Cabot Creamery seems to have the art of all-natural cheese making down pat!
I was Blessed to receive bars of Cabot Spicy Light Jalapeno Cheddar & Light Pepper Jack cheeses for review.

I’ve been eating fat-free and low fat cheeses for years. I’d all but given up on finding a great tasting low fat cheese that worked well in recipes and melted. When you heat most low fat cheese it turns into a hard, inedible substance resembling plastic. Not only is Cabot Creamery low fat cheese great for snacking it works well in recipes, melts wonderfully and it tastes absolutely delicious. I’m wild about the spicy varieties, as you know “I love my food highly seasoned!”
Cabot Pepper Jack Light is naturally gluten free and it’s also lactose free. Pepper Jack Light has all the flavor of Cabot’s regular Pepper Jack Cheese with 50% less fat. One serving contains just 70 calories and provides 8 grams of protein and 20% daily value of calcium. Pepper Jack Light is a yummy snacking cheese. It’s creamy and perfectly spiced and it pairs really well with a piece of fruit and a few crackers. It really fills me up when I’m starving at 3 pm and dinner is a few hours away. Pepper Jack Light is a fun cheese to cook with too. It melts really nicely so it’s great to toss into omelets, sprinkle on top of left overs & veggie chili and use in recipes.
Instead of plain baked potatoes try making Cabot Pepper Jack Stuffed Potatoes next time! They’re easy to make, healthy and taste so delicious!
Serves 4
Ingredients

- 4 medium baking potatoes
- ½ cup sliced green onions
- 1 teaspoon canola oil
- 1 cup Cabot No Fat Cottage Cheese
- 2 teaspoons 1% milk
- ½ teaspoon “lite” salt
- ½ teaspoon ground black pepper
- 4 ounces Cabot Pepper Jack Light, grated (about 1 cup)
- Paprika to taste
Directions
- Preheat oven to 375°F.
- Scrub potatoes, pierce in several places with fork and arrange in baking dish.
- Bake for 1 hour, or until tender when pierced with knife. Set aside to cool slightly.
- Meanwhile, combine green onions and oil in nonstick skillet over medium-high heat; cook stirring, until tender. Transfer to bowl.
- Cut potatoes lengthwise in half and scoop out as much softened potato as possible, leaving skins intact. Add potato to green onions in bowl. Stir in cottage cheese, milk, salt and pepper. Stir in cheese.
- Spoon mixture back into potato skins. Arrange in 9-by-13-inch baking dish. Sprinkle tops with paprika.
- Bake for 20 to 30 minutes or until potatoes are heated through and cheese is melted.
Cabot Jalapeno Light Cheddar was the highest scoring (99.2) reduced fat cheddar at the U.S. Championship Cheese Contest (March 2007).
I told you I love my food highly seasoned! Jalapeno light is yummy by the slice but it’s delicious melted on top of cornbread, sprinkled on soups and shredded on salads. It’s also delicious on tacos and burritos! Ditch the bag of pre-shredded fat-free, tasteless ‘stuff’. Cabot Jalapeno Light Cheddar is loaded with bold flavor you just don’t find in the other brands. Cabot’s Jalapeno Light Cheddar adds a zesty touch to rice dishes, pastas, and sandwiches! It melts just like the full fat version but contains 50% less fat!
