If you’re a vegetarian or vegan you know that when you dine in a restaurant your menu options are limited. More times than not my husband is presented with a huge platter of food including an entrée and side dishes. Then my plate arrives and it includes a meager portion of either pasta or a baked potato and some veggies. Let me fill you in on a few things. Women may want you to think we have small appetites, we don’t! Vegetarians are as hungry as everyone else! When I’m starving and receive a ‘child-sized’ portion at a restaurant (and still pay top dollar) I won’t return.
For the first time ever I’m creating fancy, restaurant classics that I’ve been pining away for but haven’t indulged in! I’ve shunned these dishes on restaurant menus because they were either too expensive or they were made with meat. Now I have access to 150 plant-based classics from all over Europe! What I love about this cookbook is the variety of recipes. I’ve always been able to cook Italian food and The 30-Minute Vegan’s Taste of Europe has some wonderful vegan recipes for Italian food including Tiramisu Parfait. But I’ve never mastered other cuisines. I was never wild about French food, but The 30-Minute Vegan’s Taste of Europe has me rethinking that. Seitan Bourguignon is the perfect cold weather ‘stew’ and is ready in about 20 minutes.
While flipping through The 30-Minute Vegan’s Taste of Europe I found a recipe for Kasha Varnishkes, a dish I learned to make as a little girl. The recipe is very similar to mine and I’m going to be making it this weekend and compare to see which one I like better! Kasha Varnishkes is an ancient dish of Eastern European origin made with buckwheat groats and bowtie pasta, it was one of my Dad’s favorite meals.
