I’ve loved quinoa (or Keen-o-ah as my nephew Micah calls it) for years!  Quinoa has more protein than any other grain and the protein it supplies is a complete protein so us vegetarians really dig it!  It’s also a great source of magnesium, folate, phosphorus, iron and fiber.  And those who live a gluten-free lifestyle can enjoy quinoa to their heart’s content because it’s not a wheat product!  You’d think Hubby the hubster would be standing in line with his plate begging for quinoa?  Nope, he hates it and I finally found out why!  He sampled quinoa at a party and it tasted bitter.  Ahhhhh!  Now I know why he doesn’t didn’t like quinoa!

If you’ve ever experienced a bitter taste when eating quinoa it wasn’t rinsed properly prior to cooking.  The surface of quinoa contains a coating called saponin, which needs to be rinsed really well in cold water before cooking.  Just 2 minutes or so under cold, running water will do the trick and you’ll never have to endure that bitter, soapy taste!  Voila!  Quinoa at it’s finest!

Now you know that quinoa isn’t bitter or soapy tasting.  What does quinoa taste like?  Quinoa has a slightly nutty taste and a chewy texture but it takes on the flavors of the ingredients you cook it with.  The nice thing about quinoa is it’s available in most supermarkets in different forms like seeds, flakes and flour so you can use it in almost any kind of recipe.

500 Best Quinoa Recipes includes dishes that will please even the most ardent quinoa ‘haters’!  I’ve never thought of cookin’ up quinoa for breakfast.  But what a great idea!  The Tofu Quinoa Scramble looks delicious and is ready in less than 10 minutes!  Or how ’bout Toasted Quinoa Porridge instead of oatmeal or grits on a cold winter morning!  That’s a great way to start the day!

500 Best Quinoa Recipes features the most scrumptious Soups, Stews and Chilis, Salads and Sides, Vegetarian Main Dishes, Meaty Main Dishes, Breads and of course Desserts!  Who doesn’t love a sweet, light pancake?  I thought this would be the perfect way to re-introduce Hubby to quinoa.  Feel free to sweeten the batter with either honey or pure maple syrup (yum!) Blintz Pancakes with Yogurt and Jam
Makes 12 pancakes
These pretty puffed pancakes — beautifully textured and absolutely delicious — have much of the flavor of cheese-stuffed blintzes, sans fuss. The key is cottage cheese in the batter, which, together with the quinoa flour, power-packs each pancake. Tart yogurt and fruit preserves top things off with delectable ease.

Ingredients

These pretty puffed pancakes — beautifully textured and absolutely delicious — have much of the flavor of cheese-stuffed blintzes and they're made with quinoa.

  • 1 cup quinoa flour
  • ½ tsp baking soda
  • ¼ tsp  fine sea salt
  • 4 large eggs
  • 1 cup cottage cheese
  • ½ cup milk
  • 2 tbsp vegetable oil
  • 2 tbsp pure maple syrup or liquid honey
  • Nonstick cooking spray
  • 1 cup plain yogurt
  • ¼ cup fruit-sweetened blackberry or raspberry jam

 Directions

  1. In a large bowl, whisk together quinoa flour, baking soda and salt.
  2. In a medium bowl, whisk together eggs, cottage cheese, milk, oil and maple syrup until blended.
  3. Add the egg mixture to the flour mixture and stir until just blended.
  4. Heat a griddle or skillet over medium heat. Spray with cooking spray. For each pancake, pour about 1⁄4 cup (60 mL) batter onto griddle. Cook until bubbles appear on top. Turn pancake over and cook for about 1 minute or until golden brown. Repeat with the remaining batter, spraying griddle and adjusting heat as necessary between batches.
  5. Serve pancakes topped with yogurt and jam.

Storage Tip – Let pancakes cool completely on a wire rack, then wrap individually in plastic wrap and store in an airtight container in the refrigerator for up to 2 days or the freezer for up to 1 month. Reheat in the microwave on High for 45 seconds, until warmed through (no need to thaw), or toast in the toaster oven for 1 to 2 minutes or until toasted and warmed though.

    I think the The Complete Homebrew Beer Book looks interesting as well as the Slow Cooker one looks great. I remember when I was single I would chuck two frozen chicken breasts into the crockpot with one cup of water and a cup of salsa…by the time I got home at 6pm, having put the crockpot on low all day, dinner was ready to be served!
