It’s not often that I’m stumped when it comes to food but I’ve got to hand it to the folks at Robert Rose Inc., they caught me off guard when I received my most recent cookbook giveaway. I had never heard of ebelskivers so I had to do a quick Internet search to find out what these little rascals were. Turns out I’ve been missing out on something really tasty!
Ebelskivers (pronounced “able-skeevers”) are traditional Danish pancakes served on special occasions. About the size of a racquetball, they’re a cross between a donut, popover and a pancake. They’re cooked on the stovetop (no oven required) in a seven-well ebelskiver pan. Traditional Ebelskivers as the name translates are made with sliced spiced apples but nowadays you’re most apt to find them stuffed with raspberry jam and dusted with powdered sugar.
Still not sure about these tasty little desserts, and even more uncertain about where to buy an ebelskiver pan I did a Google search. Apparently I’ve been living under a rock! You can purchase them everywhere for about $30 or so. And if you have your heart set on modern technology you can even buy an electric ebelskiver pan and avoid the stovetop.
On to 150 Best Ebelskiver Recipes! The cookbook introduction offers the basic information you’ll need to get started preparing ebelskivers, which are really a type of quick bread. You probably have most of the ingredients in your pantry already because ebelskivers are similar to muffins, biscuits and scones.
The first chapter I turned to was the section with tips, tricks and full color photos. The pictures along with the step-by-step directions for preparing traditional ebelskiver batter eased all my fears.
150 Best Ebelskiver Recipes has two chapters devoted to breakfast and brunch items. And for dessert lovers there’s a whole chapter crammed with decadent sweet treats.
Not all ebelskivers are sweet however! There is an entire chapter of Savory Puffs for Appetizers, Snacks, Breakfast and Lunch. These ebelskivers make fabulous meals-on-the-go. They’re ideal for lunch boxes, snacks or anytime. Who could resist a Roasted Pepper Feta Puff for lunch with a big salad, or a Fresh Corn Spoon Bread Puff with a bowl of hot soup?
The last chapter is devoted to ‘Global Puffs’; a variety of puffed & stuffed pancakes, and breads from Asia, Europe, Africa and around the world that are made in pans similar to ebelskiver pans. I’m a sucker for a good cannoli so I can’t wait to try the Cannoli Puffs from Italy!
I haven’t purchased an ebelskiver pan yet but when I do the first recipe I’m going to make will be something rich, gooey and yes covered in chocolate. I think Caramel Chocolate Pecan Ebelskivers fit the bill! They look amazing and they’re not too difficult to make!
Caramel Chocolate Pecan Ebelskivers
Ready, set, indulge! Here, caramel, chocolate and pecans coalesce for an exceptionally delicious (and easy!) dessert.
You will need a 7-well ebelskiver pan.
Ingredients

- 1¼ cup all-purpose flour
- ¾ tsp. baking powder
- ¼ tsp. salt
- 1 tbsp. packed light brown sugar
- 2 large eggs, separated
- 1 cup milk
- 2 tbsp. unsalted butter, melted
- 1 tsp. vanilla extract
- ½ cup chopped toasted pecan halves
- ½ cup miniature semisweet chocolate chips
- Vegetable oil
- 14 individually wrapped soft caramel candies, unwrapped and cut in half
- Confectioners’ (icing) sugar
Directions
- In a large bowl, whisk together flour, baking powder and salt.
- In a medium bowl, whisk together brown sugar, egg yolks, milk, butter and vanilla until well blended.
- Add the egg yolk mixture to the flour mixture and stir until just blended (the batter will appear slightly lumpy). Gently stir in pecans and chocolate chips.
- In a medium bowl, using an electric mixer on medium-high speed beat egg whites until frothy. Increase speed to high and beat until stiff, but not dry, peaks form. Using a rubber spatula, gently mix one-third of the egg whites into the batter. Gently fold in the remaining whites.
- Brush wells of pan lightly with oil. Set pan over medium heat. When oil begins to sizzle, add 1 tbsp. (15 mL) batter to each well. Place 1 caramel candy half in the center of each well and top with 1 tbsp. (15 mL) batter. Cook for 2 – 4 minutes or until bottoms are golden brown. Using two skewers, flip the puffs over. Cook for 2 to 3 minutes or until bottoms are golden brown and the puffs are firm to the touch. Remove pan from heat and transfer puffs to a plate. Let pan cool slightly.
- Repeat with the remaining batter and caramels, brushing wells with oil and reheating pan before each batch.
- Dust the ebelskivers with confectioners’ sugar. Serve warm or at room temperature.
Makes about 28 puffs. Tips – An equal amount of regular semisweet chocolate chips may be used in place of the miniature chocolate chips. Coarsely chop the chips for more even distribution of the chocolate throughout the ebelskivers. An equal amount of chocolate-covered caramel candies, unwrapped and halved, may be used in place of the caramels.
