During the week Hubby grabs a cup of coffee and runs out the door at 6 a.m. He has breakfast at his desk during his break. Since I was sick in September I’ve stopped eating breakfast because my stomach is still not quite right. I usually start to feel the first pangs of hunger about 11 o’clock and that’s when I’d really love to eat a decent meal. As luck would have it that’s when I’m right smack dab in the middle of work and don’t want to stop. You can see why I look forward to an occasional Eggland’s Best weekend brunch. I get to sleep a little later than usual, linger over my food and enjoy some quiet time with Hubby!
I was Blessed to receive an Eggland’s Best Brunch Prize Package for review and I have another one to giveaway.

Munch on Brunch with Eggland’s Best Eggs!
Eggs got a bad rap a few years ago and lots of folks stopped eating them. But the truth is Eggland’s Best eggs are different from other eggs. Eggland’s Best hens are fed a hormone-free, antibiotic-free, steroid-free all-natural, vegetarian diet that consists of healthy real food. * The result is an egg that contains: 10 times more vitamin E, double the amount of omega-3’s, twice the amount of vitamin D, 3 times more vitamin B12, 25% less saturated fat and 38% more lutein.
If you’re looking for a fast, healthy, vegetarian brunch idea, you’ve got to try the Loaded Veggie Omelet. I serve this with spicy salsa and a side of hash brown potatoes. And I always double the recipe because the leftovers are awesome for lunch the next day! Eggland’s Best Eggs are the best part brunch! Here’s what we had last weekend!
