Healthy Slow Cooker Second Edition Giveaway at Leslie Loves Veggies

I was Blessed to receive The Healthy Slow Cooker, Second Edition by Judith Finlayson for Review

ISBN-10: 0778804798

Publisher: Rose, Robert Incorporated

I remember when my mom first got a slow cooker.  She used it for cooking beef stew, pot roast and all kinds of meat dishes.  I don’t ever remember her cooking a low fat, low carb, healthy meal in the crockpot.  As a matter of fact I thought a slow cooker was for cooking meats and high fat dishes.

When I got married I received a slow cooker and figured I’d use it for cooking Hubby’s meat dishes while I prepared my vegetarian meals on the stove.  I quickly realized the slow cooker was a wonderful appliance for cooking beans; vegetarian soups and stews, all kinds of grain dishes and veggie casseroles.  My slow cooker hasn’t cooled down since.

Healthy Slow Cooker, Second Edition Is Not A Vegetarian Cookbook

Don’t lose me here!  While I’m a vegetarian and enjoy eating low fat meals, I realize one size doesn’t fit all.  My daughter for example cannot tolerate wheat and some of my friends and family eat a reduced carbohydrate diet.

Healthy Slow Cooker, Second Edition contains 135 delicious, nutrient-dense, gluten-free recipes geared for your health and wellness.  Healthy Slow Cooker, Second Edition takes the focus off low fat, low carb and low calorie recipes and focuses instead on the healing power of food like sustainably caught seafood, pasture-raised meat and poultry, fresh fruits & vegetables and whole grains, nuts & seeds seasoned with delectable (and good for you) herbs and spices.

From breakfast to dessert and every meal in between you’ll find an easy to make recipe in Healthy Slow Cooker, Second Edition.  Recipes include tips, nutrition information and information called “Mindful Morsels” and Natural Wonders” which provided extra tidbits of information on certain ingredients or the recipe in general. Vegetarian and vegan friendly recipes are noted at the top of each page.

My favorite Healthy Slow Cooker, Second Edition recipes include

Leafy Greens Soup
This delicious country-style soup is French in origin and based on the classic combination of leeks and potatoes, with the addition of healthful leafy greens. Sorrel, which has an intriguing but bitter taste, adds delightful depth to the flavor. Sorrel is available from specialty greengrocers or at farmers’ markets during the summer, but if you’re unsuccessful in locating it, arugula or parsley also work well in this recipe.
Serves: 8 Servings
Ingredients
  • 1 tbsp. butter or olive oil
  • 1 tbsp. olive oil
  • 6 small leeks, white and light green parts only, cleaned and thinly sliced
  • 4 cloves garlic, minced
  • 1 tsp. sea salt
  • 1 tsp. dried tarragon
  • ½ tsp. cracked black peppercorns
  • 6 cups vegetable stock
  • 3 medium potatoes, peeled and cut into ½ -inch cubes
  • 4 cups packed torn Swiss chard leaves
  • 1 cup packed torn sorrel, arugula or parsley leaves
  • Heavy or whipping (35%) cream or non-dairy alternative, optional
Instructions
  1. In a large skillet over medium heat, melt butter and olive oil. Add leeks and cook, stirring, until softened, about 5 minutes. Add garlic, salt, tarragon and peppercorns and cook, stirring, for 1 minute. Add stock and bring to a boil.
  2. Transfer to slow cooker stoneware. Stir in potatoes. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until potatoes are tender. Add Swiss chard and sorrel, in batches, stirring after each to submerge the leaves in the liquid. Cover and cook on High for 20 minutes, until greens are tender.
  3. Working in batches, purée soup in a food processor or blender. (You can also do this in the stoneware using an immersion blender.) Spoon into individual serving bowls and drizzle with cream, if using. Tip – If you are halving this recipe, be sure to use a small (2 to 3 ½ quart) slow cooker.
Notes
You will need a large slow cooker (approx. 5 quart) and food processor or blender.

This recipe can be halved.
