As far as I’m concerned the slow cooker is one of the few small kitchen appliances I can’t do without.  Whether it’s a tiny slow cooker suitable for newlyweds or a large, state of the art crockie with all the bells and whistles a kitchen just isn’t complete without a slow cooker.  Slow cookers are easy to use and don’t require constant supervision.  Place the humblest of ingredients in the crock, turn on and dinner is ready when you are.  But if you’re like me you make the same recipes over and over again.  While I still have the slow cooker cookbooks I used back in the day the recipes are dated.  My older cookbooks don’t include many vegetarian recipes, use contemporary ingredients like my beloved balsamic vinegar and roasted red pepper or offer ethnic recipes.

Easy Everyday Slow Cooker Recipes contains 200 recipes and more than 80 full-page, mouthwatering photographs highlighting North American regional cuisine and globally inspired dishes.  I’ve been preparing the same minestrone soup for years.  Easy Everyday Slow Cooker Recipes’ Mexican Minestrone with Cornmeal Dumplings is full of vegetables and the addition of cornmeal dumplings, which are cooked right on top of the soup makes this a full meal!

Creamy Tomato Tortellini Soup Slow Cooker Style (vegetarian)

Creamy Tomato Tortellini Soup Slow Cooker Style (vegetarian)
A package of fresh tortellini or other cheese-filled pasta makes Creamy Tomato Tortellini Soup a satisfying meal the whole family will enjoy.
Serves: 4-6 Servings
  • ⅓ cup melted butter
  • ⅓ cup all-purpose flour
  • 2 cups chicken broth
  • 3 large tomatoes, coarsely chopped
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • ½ tsp. dried basil
  • ½ tsp. salt
  • ¼ tsp. dried oregano
  • ⅛ tsp. cayenne pepper
  • (1) 10 oz. package of fresh cheese-filled tortellini
  • (1) 12 oz. can evaporated milk
  • 6 cups baby spinach leaves or chopped trimmed spinach
  • Freshly ground black pepper
  • Freshly grated Parmesan cheese
  1. In slow cooker stoneware, whisk together melted butter and flour until a smooth paste forms. Slowly whisk in broth until combined. Stir in tomatoes, garlic, onion, basil, salt, oregano and cayenne.
  2. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until soup is thick and vegetables are tender.
  3. Using an immersion blender, or in a food processor or blender, purée soup until smooth. (If using food processor or blender, return mixture to stoneware.)
  4. In a large pot of boiling salted water, cook tortellini according to package directions. Drain and add to stoneware. Stir in evaporated milk and baby spinach.
  5. Cover and cook on High for 5 minutes or until spinach is slightly wilted.
  6. Ladle into bowls and sprinkle with black pepper and Parmesan.

You will need a 4-quart or larger slow cooker.

Adding the baby spinach at the end gives it a fresh-from-the-garden flavor. This dish can be assembled up to 12 hours in advance. Prepare through step 1, cover and refrigerate overnight. The next day, place stoneware in slow cooker and proceed with step 2.

To ripen tomatoes, place them in a brown paper bag and store at room temperature. Never store tomatoes in the refrigerator, as it destroys their delicate flavor.

    I like the Everyday to Entertaining cookbook.I’d like to win because the recipes look delicious and I would love to try them.I like to make different things and if I had this book I know it would help,i usually find recipes online and it’s hard when you’re trying to prepare the meal while following the steps on your computer.

    Oooh they have a Complete Book of Pickling. YUM I adore pickles!
    However, they still have The Science of Good Food by Andrew Schloss & David Joachim and I still want it. How cool does this book look! Food science is so fun.

    I’d also like the Leafy Greens Cookbook because I am trying to get more veggies into our diet.     I would absolutely love to own “The pH Balance Health & Diet Guide for GERD, IBS & IBD”- what a great concept for a book! “The Science of Good Food” is a book I’ve had my eye on for quite some time now, as are the “Eat Raw, Eat Well”, “Raw, Quick, and Delicious” and “RawEssence”.     I’d love to win the Slower cooker cookbook because we use our slow cooker at least 3 times a week in summer. We live in VERY hoe Mississippi. We set up the slower on top of the washing machine so even though there’s little heat, the house stays that much cooler. I like the 100 BEST ASIAN NOODLE RECIPES. I love noodles but they never turn out right.
