Celebrate The Holidays With Delicious Pumpkin Recipes From The Best of Bridge Holiday Classics Cookbook

If you’re like me you’ll use any excuse to have an extra slice of pumpkin pie.  In addition to a killer Pumpkin Pecan Pie recipe, Best of Bridge Holiday Classics also features recipes for Pumpkin Pecan Muffins, Pumpkin Soup and very festive Pumpkin Cheesecake!

Pumpkin Cheesecake
A grand finale for Thanksgiving dinner.

Ginger Snap Crust
  • 1 cup crushed ginger snaps
  • 3 tbsp butter, melted
  • 1 tsp ground cinnamon
  • 2 tbs brown sugar
  • 4 packages (each 8 oz.) cream cheese, softened
  • 1 1⁄2 cups granulated sugar
  • 5 eggs
  • 1⁄4 cup all-purpose flour
  • 2 tsp pumpkin pie spice or equal parts ginger, cinnamon and nutmeg
  • 1 can (14 oz.) pumpkin
  • 2 tbsp rum
  • 1 cup heavy or whipping (35%) cream, whipped
To make Crust:
  1. Combine ingredients.
  2. Lightly grease a 10-inch springform pan and line bottom with crumb mixture.
  3. Pat firm and chill.
To make Filling:
  1. Preheat oven to 325°F
  2. Beat softened cream cheese till fluffy. Slowly beat in sugar. Add eggs, one at a time, beating well after each addition.
  3. Gradually beat in flour, spices, pumpkin and rum.
  4. Pour batter over crust.
  5. Bake for 1 1⁄2 to 1 3⁄4 hours or until filling is set.
  6. Cool for an hour. Refrigerate several hours.
  7. Garnish with whipped cream and a sprinkle of cinnamon.

    I’d like to try The Smoothie Bible, Second Edition. I make a tasty smoothie at least 5 days per week. But, it’s the same combo. I’d love to be inspired to try some different recipes to jazz up my morning. This book sounds great.

    12,167 Kitchen and Cooking Secrets by Susan Sampson & Top 100 Step-By-Step Napkin Folds by Denise Vivaldo & of course…. The Science of Good Food by Andrew Schloss & David Joachim are all books I would love to play with. I love holiday sweets baking.
