Cheesecake is my favorite dessert of all times.  I don’t eat it very often but when I do I want the richest, creamiest, most decadent slice I can get my greedy little mitts on.  I blame my mom for that.  My mother wasn’t a great cook but there were a few recipes and dishes she was a master at.  One of those was cheesecake.  She only made her “Velvet Cheesecake” once or twice a year because the ingredients cost a fortune and the recipe was a beast to create.

I have my mother’s delicious, hand-written Velvet Cheesecake recipe tucked away for safekeeping.  My mom’s recipe will always hold a special place in my heart but I’m ready for a whole new world of cheesecakes!

The Cheesecake Bible is devoted to one thing and one thing only; cheesecake.  With 200 cheesecake recipes this cookbook is the only one I’ll ever need to refer to when making my favorite dessert.  I always knew rich, indulgent cheesecake could be made at home.  I just never realized it was so easy.  As a matter of fact cheesecake is easier to make than traditional cakes and the wow factor can’t be beat!

The Cheesecake Bible begins with a chapter devoted to the tools, equipment and ingredients needed to make the perfect cheesecake.  Basic techniques are included along with answers to your most common cheesecake questions, like why cheesecakes crack.  This cookbook is a “foodie” lovers dream!  I read, planned which cakes to make and salivated at the sight of the gorgeous cheesecake recipes in this book.  There are even chapters devoted to no-bake and savory cheesecakes and special holiday desserts.

Blue Ribbon Cheesecake
The creator has won numerous awards with this recipe, also affectionately called “Patty’s Favorite Cheesecake” after his biggest fan, his mom!

For the Crust
  • 1 1⁄4 cups graham cracker crumbs
  • 1⁄4 cup unsalted butter, melted
For the Filling
  • 4 packages (each 8 oz.) cream cheese, softened
  • 1 1⁄4 cups granulated sugar
  • 4 eggs
  • 3 tbsp. freshly squeezed lemon juice
  • 1 tsp. vanilla extract
For the Topping
  • 1⁄2 cup sour cream
  • 1⁄4 cup granulated sugar
  • 1 tbsp. freshly squeezed lemon juice
  • 1⁄2 tsp. vanilla extract
For the Decoration
  • 2 cups fresh strawberries, sliced
For the Crust
  1. In a bowl, combine graham cracker crumbs and butter. Press into bottom of cheesecake pan and freeze.
For the Filling
  1. In a mixer bowl fitted with paddle attachment, beat cream cheese and sugar on medium-high speed until very smooth, for 3 minutes. Add eggs, one at a time, beating after each addition. Mix in lemon juice and vanilla.
  2. Pour over frozen crust, smoothing out to sides of pan. Bake in preheated oven until top is light brown and center has a slight jiggle to it, 45 to 55 minutes. Let cool on the counter for 10 minutes (do not turn the oven off). The cake will sink slightly.
For the Topping
  1. In a small bowl, combine sour cream, sugar, lemon juice and vanilla. Pour into center of cooled cake and spread out to edges. Bake for 5 minutes more. Let cool in pan on a wire rack for 2 hours. Cover with plastic wrap and refrigerate for at least 6 hours before decorating or serving.
For the Decoration
  1. Top with sliced strawberries when completely chilled.
Preheat oven to 350°F (180°C)

You will need a 9-inch (23 cm) cheesecake pan, ungreased, or springform pan with 3-inch (7.5 cm) sides, greased.

    The Cheesecake Bible sounds packed with delicious recipes. I once was asked by The Paddle Ball Club at our local country club to donate one of my cheesecakes for a Chinese auction. It raised $75 for the club. I never would have thought anyone would pay that for one of my cheesecakes!
    I have baked my son a cheesecake for his birthday each year…he is 37.

    I actually would love to try SIMPLY MEDITERRANEAN COOKING. I grew up in a Spanish household and I miss the food especially the fish dishes and I have forgotten most the dishes so this would be a nice reminder.

    It’s so difficult to choose, however I do know that recently I did a similar list of their books that I wanted and this Cheesecake Bible was at the top of my list 🙂 Now I’ve checked out their website again and I can’t just choose one book (there are too many I’d like) so I’ve chosen 3: The Complete Book of Pies, 100 Best Decorated Cookies and 150 Best Ebelskiver Recipes. I’m curious about the last one as Ebelskiver is a danish product that I used to enjoy whilst in Denmark, I wonder whether it’s the same thing.

    I’d like to have the Gluten Free Baking Book which has glossaries on equipment, tenchniques and ingredients for those managing gluten intolerance. Baking Gluten-free takes more products than regular baking to achieve a product that tastes comparable to regular cooking.

That extends to being a total chocoholic, so the book “300 Best Chocolate Recipes” makes me salivate.     I like the books, Sensational Buttercream Decorating, Piece of Cake!, and Complete Cake Mix Magic. I enjoy cooking cakes and often bake a cake to take whenever I go outings where I need to bring some type of food. I have found many recipes on the Internet that look like they would be delicious.     They have a couple of different cookie cookbooks. Every year, I back a bunch (about 15) of different kinds of cookies. I try a new one each year, but haven’t found a new one to try this year yet.
