I was Blessed to receive Tastefully Simple’s Corn, Black Bean Salsa, Fiesta Party Dip Mix, Blue Aztec Chips and Simply Salsa Mix for Review.  What a Fiesta of Flavors!

Baby it’s cold outside!  I decided to warm my kitchen and fill my tummy with delicious, vegetarian comfort food.  The delectable, home-style dishes that make most people swoon are usually loaded with fat and calories and take hours to prepare.  Traditional Shepherd’s Pie for example is made with ground beef and contains heavy gravy thickened with flour.  Topping the calorie-laden pie is a mound of mashed potatoes made with gobs of butter.  Comfort food?  Maybe.  Low calorie?  No way!

Fiesta of Flavors Vegetarian Corn and Black Bean Shepherd’s Pie
My lightened up, vegetarian version features hearty vegetables, beans and tender chunks of vegetarian chicken in a southwestern-style sauce thickened with mashed garbanzo beans. The beans add lots of fiber and a healthy dose of protein without changing the taste of this classic dish. I’ve omitted the butter in the mashed potato topping and added a yummy crumb topping for texture. Feel free to splurge by topping this zesty, home-style casserole with low fat shredded cheddar cheese!

Ingredients
Filling
  • 1 jar Corn, Black Bean Salsa
  • 1 Tbs. tomato paste
  • 1 Small bag frozen mixed vegetables
  • 1 9 oz. Bag faux chicken strips, diced
  • 1 tsp. Garlic Garlic ™
  • Freshly cracked black pepper
  • ½ cup Garbanzo beans, mashed
Mashed Potatoes
  • Instant mashed potatoes, eight servings prepared
  • 1-2 Tbs. Simply Salsa Mix
Crumb Topping
  • 18 Blue Aztec Chips, crushed
  • 1 tsp. Fiesta Party Mix
  • ½ tsp. Olive oil
  • Low-fat shredded Cheddar Cheese, optional
Instructions
  1. Pre-heat oven to 350º.
  2. Prepare 8 servings of instant mashed potatoes with Simply Salsa Mix following the directions on the package. Omit butter if desired. Set aside.
  3. Combine crushed Blue Aztec Chips, Fiesta Party Mix and olive oil. Set aside.
  4. In a large bowl combine 1 jar Corn, Black Bean Salsa, tomato paste, frozen mixed vegetables, faux chicken, 1 tsp. Garlic Garlic ™, garbanzo beans and freshly cracked black pepper to taste. Stir to combine and pour mixture into an ovenproof casserole dish or 9″ pie plate that has been sprayed with non-stick cooking spray.
  5. Spoon potatoes over filling. Sprinkle with crumb topping and bake in pre-heated 350º for 25-30 minutes until hot. Remove from oven and sprinkle with shredded cheddar cheese. Return to oven and bake an additional 5-10 minutes until cheese is melted and bubbling. Enjoy!

    I visited the Tastefully Simple site. I have never used any of their products. I love gourmet oils and vinegars so I would love to try theirs. One product that looked good was their Balsamic & Basil Dipping Oil.

    I love Tastefully Simple, so I’m always hankering to try something new. This time I would say I’d love to try Black Bean salsa (love salsa), as well as the Bayou Bourbon Glaze.. I love to make ribs and other meats in the slow cooker, and that sauce looks like it would pair well with just about any cut of meat I would use.

    The Ultimate Steak Seasoning in the Paleo BBQ Meatballs looks good. I love trying different blends of spices and tend to sprinkle them over any meat, fish or poultry dish for a quick way to infuse flavor plus get compliments. When I tell friends how easy it is to make a dish, like spray with olive oil, shake on the seasoning and then bake; their mouths fall open.
